Where's The Beef

This is always my favorite Trick of the holiday season. We have a standing reservation every year, and I adore the fact that it is a fairly stress-less night of serving 20 people in a private home. The Clients are a wonderful couple who always send us home with hugs and bottles of wine at the end of the night.

They wanted tonight's meal to be simple - a cheese display, olives and crackle bread for appetizers; a salad of bleu cheese on a wedge; roasted fingerling potatoes, grilled asparagus and beef tenderloin with Bearnaise for the main course.

The tenderloin was perfect - a caramelize crusted roasted-rare gem. Juicy, flavorful and perfect.

The meal, as it does every year, went off without a glitch. I adore small parties like this. It is much more intimate than anything else we do.


After the plates had been cleared and the guests had gotten away from the table to mill about and make room for dessert one dear lady came up to pat my hand. "I don't know what you did to that lamb, but it was so good it tasted like beef. And I normally don't like lamb."

I think she missed the part where we said, "Tonight's dinner is..." But that's ok. She was sweet. And hey - if we were magical enough to make the beef taste like beef - who am I to correct her?

I rec'd an email and the writer typed, "Another words, I will do anything blah, blah, blah" instead of saying "In other words,,,," This is an educated person. Quirky.

This just proves that most people don't have a clue what they are putting in their mouth......they think that they are experts and connosieurs.....but really don't know what they are eating to begin with.

Try stir frying the brussel sprouts with garlic and oil. Don't overfry though, and make sure the sprouts are fresh and smaller is better.

Now come on... tenderloin --> tender lamb isn't that hard to come up with... add in a couple glasses of wine or lemon drops or a shot of "wiky" before coming over and it all makes sense.

And the quote was "normally don't like"... which assuming the Whore's quoting correctly means that she's tried it and has an opinion... the idea that she thought it was lamb and tried it... and then ate it... give the lady credit.

Someone probably told her it was lamb and she believed... The good news is that maybe she will try lamb "again" and like it. Sometimes the good things we can do happen in mysterious ways. Have a smile you earned it!
